Resumen en español Los lípidos, junto con los carbohidratos y las proteínas son los principales componentes de la nutrición humana, y los triglicéridos son los principales lípidos presentes en los alimentos. Por lo tanto, toda modificación en el patrón de consumo de lípidos debe estar orientada a la modificación de la composición y estructura de los triglicéridos. La digestión de los triglicéridos por la lipasas bucal, gástrica e intestinal es altamente estereoespecífica en t (mas) érminos del reconocimiento por parte de estas enzimas del tipo de ácido graso que está unido al glicerol. La lipasa ligual-gástrica, la lipasa pancreática, y la lipasa láctea pueden liberar ácidos grasos desde diferentes posiciones de los triglicéridos (sn-1, sn-2 o sn-3), permitiendo la formación de ácidos grasos libres, monoglicéridos y glicerol. Los ácidos grasos de cadenas superiores a C16 pueden formar jabones insolubles de calcio que precipitan en la cavidad intestinal facilitando la formación de deposiciones de mucha consistencia, las que con frecuencia causan trastornos intestinales en niños y adultos. La fórmulas que se han desarrollado para reemplazar a la leche materna, contienen lípidos de origen vegetal o animal que no simulan exactamente la estereoquímica de la leche materna, con lo cual la biodisponibilidad de los ácidos grasos disminuye y se facilita la formación a partir de estos de jabones de calcio insolubles. Esta es una causa común de estreñimiento en lactantes que no reciben lactancia materna y que solo son alimentados con fórmulas. La tecnología enzimática permite la síntesis de triglicéridos con una composición y estereoquímica de ácidos grasos definida. Estos lípidos se conocen como lípidos estructurados y están ahora disponibles para modificar la composición de las fórmulas con el propósito de lograr una estereoquímica similar a la de la leche humana. La adición de lípidos estructurados a las fórmulas permiten proveer un perfil nutricional similar al de la leche materna, evitando la formación de jabones insolubles y disminuyendo considerablemente el estreñimiento en los lactantes Resumen en inglés Lipids, together with carbohydrates and proteins, are the main components of human nutrition. Triglycerides are the major lipids present in our foods, and therefore modifications in lipid consumption must be oriented to the modification of triglyceride composition and structure in foods. Digestion of triglycerides by mouth, gastric and intestinal lipases is highly stereospecific in terms of the recognition of the fatty acid bound to the glycerol. Lingual, gastric, pancrea (mas) tic, and milk lipases, can release fatty acids from different positions (sn-1, sn-2 or sn-3) of triglycerides allowing the formation of free fatty acids, monoglycerides, and glycerol. Free fatty acids with chain length up to C16 may form insoluble calcium soaps which precipitate at the intestinal track causing the formation of hard feces which frequently the cause of intestinal disorders both in infants and adults. Formulas developed to replace maternal milk contain lipids from vegetable and animal origin which can not mimic the stereochemistry of human milk, therefore the bioavailability of fatty acids can be considerably reduced and increasing formation of insoluble fatty acid soaps may be produced from these formulas. This is a frequent cause of constipation in non breast-fed infants. Enzyme technology allows the synthesis of triglycerides with a definite fatty acid composition and stereochemistry. These lipids are designed as structured triglycerides and are now available to modify the lipid composition of infant formulas allowing a stereochemical distribution similar to human milk. Structured lipids added to formulas may provide a nutritional fatty acid profile similar to mother's milk, avoiding the formation of insoluble soaps, and thus considerably decreasing constipation in babies

Resumen en español Los azúcares son importantes moléculas que desempeñan funciones trascendentales de señalización celular en los organismos superiores. Su complejidad estructural, representada por sus isómeros, anómeros y diasterómeros, amerita la implementación de metodologías modernas, rápidas y sensibles para su identificación y diferenciación. La espectrometría de masas y su analizador de trampa de iones brinda nuevas alternativas de análisis que favorecen el control de (mas) las energías de fragmentación de los analitos. A pesar de que la diferenciación de estereoisómeros no ha sido el campo de aplicación principal de la espectrometría de masas, se ha implementado una metodología para diferenciar los monosácaridos β-D-galactosa y β-D-glucosa y los disacαridos β-D-galactopiranosil-(1→4)-β-D-glucopiranσsido (lactosa), α-D-glucopiranosil-(1→4)-β-D-glucopiranσsido (maltosa) y β-D-fructofuranosil-(2↔1)-α-D-glucopiranσsido (sacarosa) a travιs de sus aductos con amonio y litio por ESI-IT-MS/MS en infusión directa. Se emplean diferentes energías de fragmentación para asegurar la existencia de iones marcadores de la estereoquímica de los analitos. Se evidencia que controlar las energías de colisiones en el análisis estructural de moléculas provee una poderosa y moderna herramienta analítica para los laboratorios de análisis. Resumen en inglés Sugars are important molecules with remarkable cell signals pathway functions in higher organisms. The structural complexity of sugar represented by its isomeric, anomeric and diasteromeric configurations deserve the implementation of modern, rapid and sensitive methodologies for its identification and differentiation. Mass spectrometry and its analyzer of ion trap provide new alternative techniques that encourage the control of the fragmentation energies supplied to mole (mas) cules. Since stereoisomer differentiation is consider outside the mass spectrometry domain, a methodology has been applied in order to differentiate β-D-galactose, β-D-glucose and the disaccharides β-D-galactopyranosyl-(1→4)-β-D-glucopyranoside (lactose), α-D-glucopyranosyl-(1→4)-β-D-glucopyranoside (maltose) y β-D-fructofuranosyl-(2↔1)-α-D-glucopyranoside (sacarose) trough its ammonium and lithium adducts by infusion on ESI-IT-MS/MS mass spectrometer. Different fragmentation energies have been used to ensure the ion marker occurrence in the analyte stereochemistry. It is evident that the collision energies control in structural analysis of molecules provides a powerful and modern analytical tool to be applied in control laboratories.
