EVALUACIÓN DEL CONOCIMIENTO SOBRE BUENAS PRÁCTICAS DE MANIPULACIÓN DE ALIMENTOS DEL PERSONAL DE COCINA DE LOS HOTELES 5 ESTRELLAS, ISLA DE MARGARITA, VENEZUELA

Resumen en español RESUMEN El objetivo de la investigación fue verificar el conocimiento que tiene el personal que prepara alimentos para buffet, sobre buenas prácticas de manipulación de alimentos. Se aplicó un cuestionario a empleados de cinco hoteles de 5 estrellas de la Isla de Margarita, escogidos por medio de un muestreo intencional. Se evaluaron seis tópicos relacionados con la manipulación de alimentos y el perfil social de los empleados. El 68,9% de los 101 participantes se c (mas) atalogó con conocimientos No Satisfactorios. La aplicación de pruebas de Ji Cuadrado evidenció que había una dependencia (a= 0,05) entre la clasificación obtenida en el cuestionario y los diferentes tópicos evaluados y que no la había (a= 0,05) entre la clasificación lograda y su lugar de trabajo. Sólo la Nota Total vs. Nivel de Instrucción presentó una relación positiva media altamente significativa (r de Pearson = 0,4; p Resumen en inglés ABSTRACT The objective of the research is to verify the knowledge that employees in charge of preparing buffets at five stars hotels of Margarita´s Island have about hygienic regulations. Five hotels were studied. A test was applied to employees chosen through intentional sampling. The test covered six topics related to food handling and the social profile of the employee. The 68.9% of the 101 employees evaluated scored "Unsatisfactory Knowledge". Ji Square test showed a (mas) dependence (a=0.05) between the obtained test scores and the different topics evaluated. Another Ji Square test determined that there was not a dependence (a=0.05) between the obtained score and the worker´s place of employement. Materia extraña en el universo

Resumen en español La hipótesis de la materia de quarks extraña constituye una de las especulaciones más excitantes de la Física del siglo XX. Si dicha hipótesis fuese correcta, la materia de quarks constituiría el estado más fundamental de la materia, conformaría el nucleo de objetos compactos como las estrellas de neutrones y podría formar objetos aun más exóticos como las estrellas de quarks. Debido al régimen de alta densidad y baja temperatura al que se encuentran sometidas (mas) estas estrellas es posible que la interacción atractiva de los quarks, a través del intercambio de gluones, favorezca la aparición de una fase superconductora de color, modificando significativamente la ecuación de estado del sistema. En este trabajo se pretende dar un panorama general de esta tematica, teniendo en cuenta, además, la influencia de campos magnéticos intensos en las estrellas de quarks Resumen en inglés The strange quark matter hypothesis is one of the most exciting speculations of the XX Century Physics. If this hypothesis is correct, the ground state of the matter would be the strange matter, which could form the core of compact objects like neutron stars or even more exotic objects like quarks stars. Due to the high-density and low-temperature regime in these stars, the interaction between quarks through gluon exchange could favor the appearance of a color superconduc (mas) ting state, significantl modifying the equation of state of the system. Búsqueda general con la cámara mosaico CCD del telescopio Schmidt de 1m del Observatorio Nacional de Venezuela

Resumen en español En el presente trabajo se muestran los resultados del programa de búsqueda y seguimiento de diversos objetos astronómicos: estrellas variables, supernovas y objetos en movimiento dentro del Sistema Solar. Para ello estamos utilizando el telescopio Schmidt de 1m de diámetro del Observatorio Nacional de Venezuela, el cual tiene acoplado una cámara mosaico CCD de 67 Megapíxeles, en un arreglo de 4 x 4 CCDs, cada uno de 2048 x 2048 píxeles. Hasta la presente hemos detec (mas) tado 372 nuevas estrellas variables, una de las cuales fue identificada como una radiofuente, y el resto son muy probablemente estrellas ráfagas de muy corto periodo. Dentro del Sistema Solar hemos encontrado TNOs (Trans-neptunianos), NEOs (Near-Earths-Objects), cometas y asteroides del cinturón principal. Se diseñó un programa de búsqueda automática para optimizar el procesamiento de los datos. La cámara ya ha demostrado sus grandes posibilidades de observación, siendo sus descubrimientos más representativos 12 nuevos asteroides, 372 estrellas variables y el TNO 38628 Huya. Resumen en inglés In the present work we report the result of our search and follow up program of several types of astronomical objects: variable stars, supernovas, and moving objects inside the solar system. We used the 1 m Schmidt telescope of the National Observatory of Venezuela which has attached a Mosaic CCD Camera of 67 Megapixels, in an array of 4 x 4 CCDs, each of 2048 x 2048 pixels. Up to now we have detected 372 variable stars, one of which has been identified as a radio source, (mas) and the rest are very probably flare stars of very short period. Inside the solar system we have found TNOs (trans-neptunian objects), NEAs (near earth asteroids), comets and asteroids of the main belt. We have written a software program to detect authomatically moving objects, to optimize the data processing. The camera has demonstrated its great observational possibilities, being its most representative discoveries 12 new asteroids, 372 variblestars, and the TNO 38628 Huya.

Propuesta de competencias laborales para médicos que brindan servicios de atención médica en hoteles cubanos/ Labour competences proposals for physicians offering medical care services in Cuban hotels

Resumen en español OBJETIVOS: identificar las principales competencias que deben tener los médicos que laboren en hoteles cinco estrellas, determinar el nivel de prioridad para cada competencia y valorar su grado de desarrollo en un grupo de ellos. MÉTODO: investigación descriptiva. Se emplearon las técnicas revisión bibliográfica y Delphi. Se aplicó el método de comparaciones pareadas Triángulo de Fuller y se construyó y validó un cuestionario que se aplicó a todos los médicos (mas) que en el 2007 laboraban en hoteles de tal categoría en Varadero. RESULTADOS: se proponen 21 competencias. Se les asignó mayor prioridad a: atención con calidad, uso de la ética médica y del secreto profesional, dominio de las enfermedades emergentes y reemergentes, desarrollo profesional continuo, atención médica integral y uso de dos idiomas. Se identificaron 8 competencias como bien desarrolladas, el resto mostró deficiente grado de desarrollo. Cinco de las competencias se reconocieron como fortalezas y otras tantas como áreas de mejora continua. CONCLUSIONES: se proponen competencias para el desempeño laboral de los médicos que trabajan en hoteles cinco estrellas en aras de contribuir a un mejor proceso de selección de los recursos humanos y a perfeccionar las estrategias de educación continua para los médicos de este sector. Conocer la auto-percepción del desarrollo de dichas competencias permitió la visualización de las fortalezas y detectar las debilidades hacia las cuales dirigir las estrategias de superación. Resumen en inglés OBJECTIVE: to identify the main competences characteristic of physician working in five stars hotels, to determine the priority level for each competence and to value the development level in some of them. METHOD: a descriptive research. Wu used the bibliographic review techniques and Delphi. We applied the Fuller Triangle paired comparisons method, and we designed and validated a questionnaire in all physicians that in 2007 worked in hotels of such category in Varadero b (mas) each. RESULTS: we propose 21 competences. We gave more priority to: quality care, use of medical ethics and the professional privacy, emergent and re-emergent diseases domain, a continuous professional development, integral medical care, and use of two languages. We identified 8 competences as well developed, remainder showed a deficient development level. Five of competences were recognized as strengths, and others, as continuous improvement areas. CONCLUSIONS: we propose the competences for the work performance of physicians working in five stars hotels to contribute to a better selection process of human resources, and to improve the continuous education strategies for physicians from this sector. To know the self-perception of the development of such competences, allow us to visualize the strengths and to detect the weakness to direct the training strategies.

Mamografía en Caracas: Calidad de Imagen y Dosis de Radiación

Resumen en español Una Evaluación piloto de pruebas de control de calidad sobre unidades en hospitales públicos fue realizado en 1993 en Caracas - Venezuela. En 10 unidades se realizaron medidas en la alineación del campo de luz respecto al de rayos X, el contacto película - pantalla, la capa hemi - reductora (CHR) , la reproducibilidad de la exposición, la precisión del Kvp, patrones de estrellas se utilizaron para la evaluación del punto focal, el maniquí de acreditación mamográ (mas) fico se uso para evaluación de calidad de imagen, la dosis glandular promedio fue medida usando la técnica usualmente empleada en la unidad, la reproducibilidad del control automático de exposición (CAE) fue probada usando laminas de BR12 de 4 cm de espesor. A pesar del pequeño número de unidades estudiadas, los resultados demuestran una gran cantidad de equipos funcionando mal, lo cual afecta la calidad de imagen y/o la dosis. Aunque este resultado probablemente depende de cantidad de unidades viejas. La evaluación sugiere que el control de calidad es esencial para la calidad del estudio mamográfico. Resumen en inglés A pilot survey of quality control test on mammography units in public hospital was conducted on 1993 in Caracas -Venezuela. The 10 units underwent measurement of alignment of light field to x-ray; screen-film contact; relative Kvp accuracy; half - value layer (HVL); reproducibility of exposure; stars be used for evaluation of focal spot; the mammography accreditation phantom be used for evaluation of image quality; the mean glandular dose was measure using the x-ray techn (mas) ique usually employed at the facility; and the AEC reproducibility was tested imaging 4 thick slabs of BR12. Despite the small number of x-ray units studied, the results demonstrated a large number of equipment malfunction and affect image quality or/and dose. Although this results was probably dependent on the older mammography units. The survey suggest that the quality control is essential in the quality of mammography studies.

La Tierra vista como exoplaneta/ Earth as an exoplanet

Resumen en español La Tierra, como único ejemplo de planeta habitable, nos da los primeros elementos para caracterizar el espectro de planetas de tipo terrestre alrededor de otras estrellas que podrían ser detectados en el transcurso de la próxima década gracias a misiones como CoRoT y Kepler y caracterizados por las misiones Terrestrial Planet Finder y Darwin. En este artículo se compendian los estudios que utilizan a la Tierra para determinar las posibles características de mundos h (mas) abitables alrededor de otras estrellas. A partir de comparar las características de la Tierra con las de los demás planetas terrestres del Sistema Solar se ha determinado que, en principio, un planeta habitable debe tener atmósfera, agua líquida y el tamaño adecuado para retener dicha atmósfera y mantener actividad tectónica por periodos de tiempo geológicamente largos. Un planeta habitado podría ser reconocido como tal a partir de la detección de bioseñales en su espectro. Simulaciones de atmósferas similares a la Tierra presente y pasada, así como el conocimiento de la evolución geológica de nuestro planeta indican que el oxígeno (O2) resulta una excelente señal de vida, en especial si está acompañado de compuestos como el metano o el óxido nitroso. Los pigmentos usados por organismos fotosintéticos también pueden generar una señal en el espectro de un planeta, la cual sería similar a la absorción de la clorofila en la Tierra. Las observaciones del brillo de la Tierra permiten analizar el espectro promediado del disco de nuestro planeta y determinar los cambios de las bioseñales dadas diferentes condiciones de iluminación y geometría. A partir de estas observaciones y modelos que generan espectros promediados del disco terrestre, se ha encontrado que la presencia de nubes en una atmósfera es el mayor reto para reconocer bioseñales y, en general, las características de la superficie planetaria. La concentración atmosférica de los compuestos producidos por la vida depende de la cantidad de radiación ultravioleta que recibe el planeta, pues ésta controla buena parte de la química atmosférica. Esta radiación depende del tipo de estrella alrededor de la cual gira el planeta. La caracterización de planetas de tipo terrestre requiere conocer las propiedades de la estrella alrededor de la cual se buscan planetas (edad, temperatura superficial, radiación emitida del ultravioleta al infrarrojo), así como construir bibliotecas de espectros planetarios que permitan reconocer los mundos habitables de los que no lo son. Resumen en inglés Earth, as the only example of a habitable world, offers thefirst elements to characterize the spectra ofterrestrial planets around other stars. Those planets may be detected in the next decade by missions like CoRoT and Kepler, and characterized by Terrestrial Planet finder and Darwin. In this paper, I reviewed the research that uses Earth to determine the possible characteristics of habitable worlds around other stars. Comparing Earth's characteristics with those of the (mas) terrestrial planets in the Solar System, the main properties of a habitable world have been determined. A habitable planet must have atmosphere, liquid water and the right size to keep that atmosphere and to maintain tectonic activity for long geologic periods. A habitable world could be recognized as such by the detection of biosignatures on its spectrum. Simulations ofpast and present Earth-like atmospheres and the knowledge of the geological evolution of our planet indicate that oxygen (O2) is an excellent signature of life, in particular if it comes along with compounds like methane and nitrous oxide. Also, the pigments used by photosynthetic organisms could generate a signature in a planet's spectrum. This signature may be similar to the chlorophyll absorption on Earth. Earthshine observations help to analyze the disk average spectrum of our planet and to determine the changes of the biosignatures given certain conditions of illumination and geometry. From such observations and models that generate disk averaged spectra of Earth it has been found that clouds are the biggest challenge to identify biosignatures and characteristics of the planetary surface in general. The atmospheric abundance of the compounds produced by life depends on the amount ofultraviolet radiation received by the planet as it drives most of the atmospheric chemistry. This radiation depends on the stellar type of the planet's parent star. The characterization of terrestrial planets requires the knowledge of the target star properties (age, effective temperature, radiation emitted from the ultraviolet to the infrared), as well as to build spectra libraries that allow recognizing habitable worlds from those that are not.

Siglo XX. Cien años de miseria y esplendor/ The 20th Century: 100 years of misfortune and splendor

Resumen en español El siglo XX ha sido uno de los períodos de la Historia más intensos y Convulsivos que le ha tocado vivir a la humanidad. Siglo de paradojas y de contrastes, se inició con optimismo, fue testigo del apocalipsis de dos guerras mundiales y terminó con un progreso científico inimaginable que nos condujo a una nueva civilización, que aún no podemos intuir. En él ocurrieron grandes acontecimientos que moldearon nuestro tiempo y proyectaron sus resultados hacia un futuro (mas) inmediato. Unos fueron providenciales para entender la vida del hombre, combatir las enfermedades y prolongar la vida y otros de innegable importancia social para la humanidad. Unos saberes se fundamentaron en otros. La filosofía se adentro en la matemática, como la ciencia en la filosofía, mientras la política y la economía ejercían tan decisivo influjo en nuestro modo de sentir y de vivir, que la cultura y la sociedad se conmovieron hasta sus cimientos. En esa centuria, se gestó además, la mayor revolución tecnológica de todos los tiempos, tan trascendental como inimaginable, que con el alunizaje pusieron al hombre en el camino hacia las estrellas y con ella se creó la sociedad de la información, cuyo máximo símbolo: internet, emergió como un nuevo demiurgo. Sin embargo ha sido el siglo XX hasta ahora, con todo su infortunio y esplendor, paradojas y contrastes, creación y destrucción, el más trascendental de toda la historia y lega al futuro un horizonte promisor en la búsqueda de un renovado significado de vida y un anhelo de convivencia pacífica para toda la humanidad. Resumen en inglés The 20th century has been one of the most intense and convulsive periods in the History of humanity. A century of paradoxes and contrasts, it began with optimism, it witnessed the apocalypse of two world wars, and finished with unimaginable scientific progress that gave us a new civilization that we cannot yet grasp. In this century, significant events happened that shaped our time and projected their results toward an immediate future. Some of these were providential in (mas) understanding man 's life, fighting against illnesses and prolonging life, and others were of undeniable social importance for humanity. Some knowledge was based on the work of others. Philosophy was embedded in mathematics, as was science in philosophy, while politics and the economy exercised so decisive an influence in our way of feeling and living that culture and society were affected to the core. Within that century the biggest technological revolution of all the time was also created, as transcendent as it was unimaginable, which put mankind on the road to the stars with the moon landing and in the process created the information society whose signature symbol, the internet, emerged as a new demiurge. However, the 20th century, with all its misfortune and splendor, paradoxes and contrasts, creation and destruction, was the most transcendent in the whole of history and it bequeaths to the future a promising horizon in the search for a renovated meaning of life and a yearning for peaceful coexistence for the whole humanity.

Simulacro ante una pandemia de influenza en el Instituto Nacional de Enfermedades Respiratorias Ismael Cosío Villegas/ Simulacrum at The National Institute of Respiratory Diseases in the presence of an influenza pandemia

Resumen en español La influenza, enfermedad respiratoria altamente contagiosa causada por un influenza virus, se ha presentado desde tiempos remotos. En tiempos de Hipócrates se describieron eventos con todas las características de probables epidemias de influenza sucedidas en la época helénica. El término se originó en Italia, siglo XV, pues las epidemias sucedidas en esa época se atribuían a la "influencia de las estrellas". No se puede determinar cuándo ocurrirá una pandemia; s (mas) in embargo, se sabe que se presenta con cierta regularidad. La primera epidemia de influenza descrita como tal y generalmente aceptada, ocurrió en Europa en diciembre de 1173; la primera pandemia descrita que afectó a Europa, Asia y el Norte de África fue en 1580, y la primera que afectó al Continente Americano ocurrió en 1647¹. Es por ello que la Organización Mundial de la Salud solicitó a los países participantes desarrollar los planes de preparación y respuesta para hacer frente a esta eventualidad. México participa por medio de numerosas entidades a nivel federal, instituciones y organismos nacionales con el objeto de proteger a la población de una pandemia mediante acciones efectivas y oportunas. El Instituto Nacional de Enfermedades Respiratorias Ismael Cosío Villegas, desarrolló una estrategia propia basándose en las seis líneas de acción contenidas en el Plan Nacional, lo que le permitirá tener las guías y elementos necesarios para formular su propio Plan de Preparación y Respuesta ante una Pandemia de Influenza. Las seis líneas de acción de acuerdo con el Plan Nacional son: 7. Difusión y comunicación social, 2. Coordinación, 3. Vigilancia epidemiológica, 4. Atención médica, 5. Reserva estratégica y 6. Investigación y desarrollo. Se describen los preparativos, curso y resultados de un simulacro de pandemia de influenza. Resumen en inglés Influenza is a highly contagious disease caused by a virus; the disease is known since the times of Hippocrates, who described events with all the characteristics of influenza epidemics during his times. Apparently, the term was coined in Italy during the XV century because the disease was attributed to the "influence" of the stars. The first formally described influenza epidemic probably dates back to December 1173; the first pandemic, in 1580, affected Europe, Asia and (mas) North Africa; the first affecting the American Continent occurred in 1647. The countries from the WHO have been asked to develop plans to face the real possibility of a new pandemic, this caused by an avian virus; Mexico has participated through the joint effort of many institutions at federal, state and municipal levels, including the Instituto Nacional de Enfermedades Respiratorias Ismael Cosío Villegas (National Institute of Respiratory Diseases) were we have developed a strategy of six lines of action to face this pandemia: Diffusion and social communication, coordination, epidemiologic surveillance, medical services, strategic reserve, development and research. The preparations, course and results of an influenza pandemic simulacrum are described.

Resumen en portugués Diferentes tipos de trabalhos descrevem a importância da dinâmica de mercados múltiplos para explicar como competem as empresas que coincidem em diferentes setores de sua atividade. Neste artigo busca-se apresentar inicialmente o corpo teórico que suporta a dinâmica competitiva, para em seguida exemplificar sua aplicação num estudo analítico que identifique as ações competitivas, não só dos dois conglomerados colombianos mais importantes, mas também dos indiv (mas) íduos que se encontram no comando destas organizações. A investigação utiliza a análise estruturada de conteúdo através de fontes secundárias para identificar as ações competitivas das organizações estudadas no período compreendido entre 1986-2002. Assim, é exposta a lógica que esses dois grupos econômicos utilizaram durante os últimos anos em diversos mercados e como aplicaram suas diferentes estratégias competitivas, para competirem em setores tão heterogêneos como no rádio, na televisão, nos refrigerantes, nas cervejas e inclusivo no patrocínio de estrelas do esporte e do entretenimento nacional. Resumen en español Diferentes tipos de trabajos describen la importancia de la dinámica de multimercados para explicar cómo compiten las empresas que coinciden en diferentes sectores de su actividad. En este artículo se busca presentar inicialmente el cuerpo teórico que soporta la dinámica competitiva, para luego ejemplificar su aplicación en un estudio analítico que identifique las acciones competitivas, no sólo de los dos conglomerados colombianos más importantes, sino también d (mas) e los individuos que se encuentran al mando de estas organizaciones. La investigación utiliza el análisis estructurado de contenido a través fuentes secundarias para identificar las acciones competitivas de las organizaciones estudiadas en el periodo de 1986-2002. De tal manera, se expondrá la lógica que utilizaron durante los últimos años esos dos grupos económicos en diversos mercados y cómo han aplicado sus estrategias competitivas, para rivalizar en sectores tan heterogéneos como la radio, la televisión, las gaseosas, las cervezas e incluso en el patrocinio de estrellas del deporte y la farándula nacional. Resumen en inglés Different types of work have described the importance of multi-market dynamics in explaining how companies coinciding in different sectors of their activity can compete. This article first presents the theory underpinning competitive dynamics so that examples of how they this is applied can then be analytically studied and the competitive actions of the two most important Colombian conglomerates and those of the individuals running them identified. The investigation uses (mas) structured content analysis of secondary sources for identifying these organisations’ competitive action studied from 1986-2002. The logic used by these two economic groups during the last few years in different markets is shown and how their different competitive strategies have been applied for rivalling each other in such heterogeneous sectors as radio, television, soft-drinks, beer and even sponsoring sports’ stars and national show-business people.

Resumen en español El objetivo de este artículo es presentar una breve descripción del procedimiento llevado a cabo para el escalamiento de un modelo físico que representará el comportamiento del campo La Hocha al ser sometido a un proceso de calentamiento eléctrico resistivo. En la primera parte de este escrito se describen los principios básicos para el escalamiento físico. Seguidamente, se plantean las ecuaciones fundamentales para el proceso de calentamiento eléctrico resistivo, (mas) su transformación a la forma adimensional y los grupos de similaridad que permitirán el escalamiento del modelo. El proceso de escalamiento toma forma en la sección final, en donde se definen las características del prototipo de campo, las fuerzas a reproducir en el modelo, la alternativa de escalamiento seleccionada, el cálculo de las propiedades del modelo y finalmente una validación del escalamiento en el simulador térmico STARS-CMG. El diseño conceptual del modelo físico para el proceso de calentamiento eléctrico resistivo en el campo La Hocha (Hocol S.A.), requirió la combinación de alternativas de escalamiento tradicionales a baja presión y baja temperatura. Resumen en inglés This paper is aimed at presenting a short description of the procedure carried out for the scaling of a physical model representing the behavior of La Hocha field by subjecting it to a resistive electrical heating process. The first part of this paper describes the basic principles for the physical upgrading, then the fundamental equations are proposed for the resistive electrical heating process, its transformation into the non-dimensional form and the similarity groups (mas) enabling the model scaling. The scaling process takes its form in the final section, where the field prototype characteristics, as well as the forces to be reproduced in the model, the chosen scaling option and calculations of the model properties are defined herein. A validation of the scaling in the thermal simulator (STARS-CMG) is also provided. The physical model conceptual design for the electrical resisting heating process in La Hocha field (HOCOL S.A.) required the combination of low pressure and low temperature traditional scaling options.

Resumen en español En el sector argentino del Canal Beagle, la pesquería de Lithodes santolla se encuentra colapsada y cerrada desde 1994, mientras que la del centollón Paralomis granulosa está estable, aunque por el crecimiento lento de la población no podría soportar alta presión de pesca. En este estudio se determinó la profundidad de reclutamiento de los estadios bentónicos tempranos y se evaluó la efectividad de colectores artificiales pasivos como oferta de refugio. En 2002 s (mas) e fondearon colectores "SAC" en tres estratos de profundidad: 10(-2)0, 20-40 y 40-90 m. En 2003, se colocaron colectores "Cajón" en dos estratos de profundidad: 10(-2)0 y 20-40 m. En marzo de cada temporada se retiraron los colectores y se registró el número y tamaño de L. santolla y P. granulosa, y se determinó el taxón más abundante en cada colector. Los individuos del primer año de vida, i.e. Resumen en inglés The L. santolla fishery in the Argentinean sector of the Beagle Channel collapsed and has been closed since 1994. Landings of P. granulosa in this sector are stable, but will not allow it to withstand heavy fishing pressure. In this study, we determined the recruitment depth of the early benthic stages of both lithodid species, and evaluated the effectiveness of passive artificial collectors as potential sources of refuge. In 2002, "SAC" collectors were deployed in three (mas) depth strata: 10(-2)0, 20-40, and 40-90 m. In 2003, "Cajón" collectors were deployed in two depth strata: 10(-2)0 and 20-40 m. The collectors were retrieved, respectively, in March 2003 and 2004, and the number and size of L. santolla and P. granulosa were recorded, along with the most abundant taxon in each collector.
