Consumo de ácidos grasos trans y riesgo cardiovascular/ Consumption of trans fatty acids and cardiovascular risk

Resumen en español Los ácidos grasos con configuración trans poco se encuentran en los alimentos de manera natural, sino que se incorporan a éstos como consecuencia de modificaciones principalmente debidas a los procesos industriales de hidrogenación a que se someten los aceites para convertirlos en grasas sólidas. Aún cuando su estructura incluye dobles enlaces, el tipo de configuración permite un comportamiento biológico similar al de los ácidos grasos saturados, con efectos nega (mas) tivos sobre múltiples funciones celulares. La evidencia demuestra que son perjudiciales para la salud, en especial a lo que se refiere a riesgo de enfermedad cardiovascular, razón por la cual es importante disminuir su consumo. Teniendo en consideración la evidencia obtenida de investigaciones sobre las alteraciones del metabolismo producidas por los ácidos grasos trans, es posible plantear una precaución lógica hacia el consumo de dietas ricas en dichos ácidos. Sus efectos deletéreos serían incluso peores en aquellas poblaciones que consumen bajas cantidades de ácidos grasos esenciales. De ahí surge la importancia de iniciar con prontitud políticas sanitarias orientadas a controlar la aterosclerosis en nuestro país. Las mismas deben estar necesariamente sustentadas sobre un conocimiento profundo de las características o condiciones particulares a las que nuestra población se encuentra sometida. Sólo así podrá darse inicio a una intervención efectiva sobre nuestros cuestionados hábitos alimentarios. Resumen en inglés Trans fatty acids are scarcely found naturally in food; they are incorporated to it as a result of modifications mainly due to hydrogenation industrial processes to which oils are submitted in order to obtain solid fats. Even when its structure includes double bonds, the type of configuration allows a biological behavior similar to that of saturated fatty acids, with negative effects on multiple cellular functions. The evidence shows that they are harmful to health, espec (mas) ially in regard to risk of cardiovascular disease, which is why it is important to reduce its consumption. Given the evidence obtained from research on alterations of metabolism produced by trans fatty acids, it is possible to raise a logical precaution for the consumption of diets rich in these acids. Its deleterious effects would be even worse in those populations that consume low amounts of essential fatty acids. Hence the importance of prompt sanitary policies directed to the control of atherosclerosis in our country. They must be based necessarily on an in-depth knowledge of the characteristics or particular conditions to whiwhich our our population is subjected. Only thus, can initiate an effective intervention questioned about our eating habits.

Efecto del ácido linoleico conjugado (CLA) sobre el perfil lipídico en humanos/ Effect of conjugated linoleic acid (CLA) on human lipid profile

Resumen en español El término ácido linoleico conjugado (CLA) hace referencia a un grupo de isómeros del ácido linoleico, caracterizados por tener enlaces dobles conjugados en varias posiciones y conformaciones. El CLA se encuentra de forma natural en algunos alimentos, aunque desde que se le atribuyen efectos beneficiosos sobre varios aspectos relacionados con la salud, numerosos grupos investigadores han estudiado los efectos de la suplementación con este ácido graso. En este sentid (mas) o, el efecto del CLA sobre el perfil lipídico de los animales ha sido extensamente estudiado y existen evidencias confirmadas de beneficios sobre diversos marcadores metabólicos. Sin embargo, los resultados de los ensayos de intervención en humanos son ambiguos. El objetivo de esta revisión fue reunir los datos disponibles y más actuales acerca de los efectos del CLA en el perfil lipídico de humanos. Diversos estudios no hallaron efectos significativos en ninguna de las variables estudiadas; sin embargo, otros trabajos encontraron tanto efectos beneficiosos como desfavorables en el colesterol total, c-LDL, c-HDL, índice aterogénico, triglicéridos y lipoproteína(a). Esta discrepancia podría probablemente deberse a las diferencias en la dosis, composición de isómeros y placebo utilizado, así como a la duración del estudio y al estado nutricional de los sujetos incluidos, entre otros. No obstante, el análisis de los estudios de 12 semanas de duración, realizados con una mezcla en cantidades iguales de los dos isómeros principales del CLA (cis-9, trans-11 y trans-10, cis-12) y con dosis diarias de entre 3 y 4 g aproximadamente, parecen ofrecer los resultados más beneficiosos. Resumen en inglés The term conjugated linoleic acid (CLA) concerns a group of isomers of linoleic acid, which are characterized by having conjugated double bonds in several positions and conformations. CLA is found naturally in some foods, but since CLA was first held to cause beneficial effects on various health-related issues, many investigations have been conducted to elucidate the effects of dietary supplementation with CLA. The effects of CLA on lipid profiles on animals have been ext (mas) ensively studied, and there is sound evidence of its benefits in blood metabolic markers. However, clinical trials in humans have provided ambiguous results. The aim of this review was to gather up-to-date available data about the effects of CLA on human lipid profile. Although most studies did not show any significant effect in none of the studied variables, some trials reported both beneficial and detrimental effects on total cholesterol, LDL-c, HDL-c, atherogenic index, triglycerides and lipoprotein(a). This discrepancy could be due to differences in dosage, isomer composition, duration of the study, placebo and participating subjects, among others. However, studies with a duration of two weeks, carried out using a mix of equal amounts of the two main CLA isomers (9-cis, 11-trans and 10-trans, 12-cis) and with doses of 3 to 4 grams per day, seem to offer the most beneficial results.

El ácido linoleico conjugado disminuye la hipercolesterolemia pero aumenta el riesgo de litiasis biliar/ Conjugated linoleic acid lowers hypercholesterolemia but increases the risk for biliary lithiasis

Resumen en español El término ácido linoleico conjugado (ALC) designa una serie de isómeros del ácido linoleico, presentes en la carne y productos lácteos de rumiantes, que presentan sus dos dobles enlaces en posición conjugada. El objetivo del presente trabajo fue estudiar los efectos de un isómero del ALC, el trans-10, cis-12, sobre la colesterolemia y el riesgo de litiasis biliar en un modelo animal de hipercolesterolemia inducida por dieta. Para ello se utilizaron dos grupos de h (mas) ámsters alimentados con una dieta hipercolesterolemiante suplementada al 0,5% con ácido linoleico o con el isómero trans-10, cis-12 del ALC, respectivamente. Se midió diariamente su ingesta de alimento y peso corporal y, tras 6 semanas, se obtuvieron muestras de suero y bilis, y se diseccionaron y pesaron sus hígados y bazos. Se determinó la colesterolemia, el contenido hepático y esplénico de colesterol, y la concentración biliar de colesterol, fosfolípidos y sales biliares; se calculó el índice litogénico biliar y se evaluó la presencia de cálculos biliares. El ALC no modificó la ingesta energética, el peso corporal final, ni el tamaño y contenido de colesterol del bazo, pero sí produjo una disminución significativa del colesterol sérico total (-18%) a expensas de la fracción c-LDL (-66%), y también redujo significativamente el contenido hepático de colesterol libre (-26%), sin cambios en el colesterol esterificado. Además, el ALC produjo un incremento del 32% de la concentración biliar de colesterol, un aumento del 28% del índice litogénico y una mayor incidencia de litiasis biliar. Por tanto, el presente estudio demuestra que el isómero trans-10, cis-12 del ALC es hipocolesterolemiante debido, al menos en parte, a que aumenta la secreción de colesterol a bilis. En contrapartida, este efecto aumenta el riesgo de litiasis biliar. Resumen en inglés The term conjugated linoleic acid (CLA) refers to a series of linoleic acid isomers present in meat and diary products from ruminants that have their double bonds in a conjugated position. The aim of the present work was to study the effects of a CLA isomer, trans-10,cis-12, on cholesterolemia and biliary lithiasis risk in an animal model of diet-induced hypercholesterolemia. For that, two groups of hamsters were fed with a hypercholesterolemic diet supplemented with 0.5% (mas) linoleic acid or with the trans-10,cis-12 CLA isomer, respectively. Daily food intake and weight were determined and, 6 weeks later, serum and bile samples were obtained, and livers and spleens were dissected and weighted. Cholesterolemia, hepatic and splenic cholesterol content, and biliary cholesterol phosnolipid and bileacid concentrations were determined; Biliary Lithogenic Index was calculated, and presence of gallstones was assessed. CLA did not modify energetic intake or final body weight, spleen size or spleen cholesterol content, but it did significantly reduce total serum cholesterol (-18%) at the expense of c-LDL (-66%), and it also significantly reduced hepatic content of free cholesterol (-26%), without changes in esterified cholesterol. Besides, CLA produced a 32% increase in biliary cholesterol concentration, a 28% increase in Lithogenic Index, and a higher incidence of biliary lithiasis. Therefore, the present study shows that the CLA trans-10,cis-12 isomer is hypercholesterolemic since it increases, at least in part, cholesterol secretion to the bile. As a consequence, this effect increases the risk for biliary lithiasis.

Resumen en español El compuesto, 3- carboximetil- 4- (4-clorofenil) -2, 7, 7- trimetil- 5-oxo -1,4,5,6,7,8-hexahidroquinoleina C20 H22 O3 N Cl, se recristalizó a partir de una solución de etanol, obteniéndose cristales transparentes de color blanco, cristaliza en el sistema monoclínico con grupo espacial P21/n, a= 9.331(2), b= 18.340(4) y c= 11.493(2) Å, beta= 109.74(2)°, Z=4. El sustituyente 4-aril ocupa una posición pseudoaxial ortogonal al plano del anillo de dihydropyridina. El g (mas) rupo éster muestra preferencia por el ordenamiento trans con respecto al doble enlace del anillo de dihydropyridina. El anillo 1,4-dihydropyridina adopta conformación tipo "bote". Existen dos puentes de hidrógenos, uno intramolecular entre el C2A del grupo metil y el O1 [C2A.O1]: 2.724(8) Å y uno intermolecular [N.O3]: 2.861(1) Å Resumen en inglés 3- carboxymethyl- 4- (4-chlorophenyl) -2, 7, 7- trimethyl- 5-oxo -1,4,5,6,7,8-hexahydroquinoleine C20 H22 O3 N Cl cristallyzed from ethanol solution as transparent white crystal, the crystal belong to an monoclinic system with space group P21/n, with a= 9.331(2), b= 18.340(4) and c= 11.493(2) Å,beta= 109.74(2)°, Z=4. The 4-aryl substituent occupies a pseudoaxial possition, almost orthogonal to the plane of the dihydropyridine ring. The ester group show a preference for (mas) the trans arrangement with respect to the double bond of the dihydropyridine ring. The 1,4-dihydropyridine ring adopts a "boat" conformation. There are two hydrogen bonds, intramolecular hydrogen bond between C2A methyl group O1 [C2A....O1]: 2.724(8) Å and intermolecular hydrogen bond [N....O3]: 2.861(1) Å

Resumen en portugués O autor inicia por perguntar-se sobre a relevância da família na atualidade. Para responder esta questão, examina os vínculos de casal e de relação entre pais e filhos, situando-os historicamente. Sugere que os "problemas familiares" instauram-se a partir do momento em que se institui uma forma de família como oficial, sendo "problemas" as que não seguem esse modelo. Por isto, prefere referir-se a diferentes "situações familiares", que passam a ser pensadas a pa (mas) rtir da crítica de dois critérios: o de invariância, evolução de formas anteriores, ou de novidade, ruptura e recomposição. Distingue três áreas das situações familiares que podem ser examinadas de acordo com estes critérios: aquelas provenientes das relações familiares, do mundo social e de cada sujeito, das variações de seu mundo interno que produzem efeitos nos vínculos familiares. Por fim, o autor pergunta-se se as novas formas familiares respondem realmente à produção de uma novidade e se esta novidade é de forma ou de estrutura. Conclui que a família não é nova ou velha, mas faz algo novo ou não. A análise da família deve incluir uma análise do fazer em seus vínculos e das conseqüências desse fazer. Resumen en inglés The author starts by asking himself whether the family is relevant nowadays. To answer this question he analyzes the couple's relationship with each other and with their children, placing these relationships historically. It is suggested that the "familial problems" come to being when a certain pattern of family becomes standard. Those families which do not follow this pattern are then called "problematic". For that reason, the author prefers to make reference to differen (mas) t "familial situations". These are thought from a double perspective: the invariance which also refers to a sort of evolution, or the novelty which, as a contrast, relates to rupture and re-composition. Three areas of familial situations are then distinguished: those which come from their familial relationships, from the social world and from each subject (as the variations from his/her internal world affect his/her familial bonds). At last, the author asks himself if the new familial forms really answer to the production of novelty and if this novelty relates to its shape or structure. He concludes that the family is not new nor old, but that it does something new or not. The analysis of the family should include an analysis of the making in its bounds and of the consequences of this making.

Resumen en inglés Ozonization of theobroma oil at different applied ozone dosages was carried out with measurement of peroxide index values, oxygen percentage content and fatty acids composition. The comparison of peroxide values with percentage content of oxygen at different applied ozone dosages showed good correlation (r=0.9923). Unsaturated fatty acids and triacylglycerols decrease with ozone applied dosage due to ozone reaction with double bonds. Small amounts of oleic acid were consu (mas) med with applied ozone dosage at 35 mg/g, which demonstrated that peroxide values and oxygen content were not principally increased by the ozone attack on the double bonds, but other mechanisms could be involved in the reaction system.
