Estudio del mezclado de emulsiones concentradas de aceite en agua aplicando la metodología de superficie de respuesta/ Study of the mixing of concentrated oil in water emulsions applying the surface response methodology

Resumen en español En la industria alimentaria se producen con frecuencia emulsiones con alto contenido de fase dispersa (> 75%), considerando parámetros físico-químicos, de composición y las condiciones de mezclado. La mayoría de las investigaciones relacionadas con el mezclado de sistemas dispersos han estudiado sistemas diluidos y sin surfactante. El presente trabajo analiza la preparación de emulsiones concentradas de aceite de maíz en agua utilizando un surfactante no iónico et (mas) oxilado. El método experimental se basó en un diseño factorial 2³ con puntos centrales y axiales, variando: velocidad de rotación del impulsor, tiempo de mezclado y proporción aceite:agua. Se evaluó la influencia de estas variables sobre el promedio aritmético de la distribución de volumen y de área de las gotas de la emulsión, d43 y d32, respectivamente. Mediante el análisis de varianza del espacio experimental, eliminando los efectos no significativos, se determinó que el d43 puede ser predicho casi en un 99% por un modelo cuadrático, a diferencia de la superficie de respuesta del d32 que no puede ser explicada en toda su extensión, porque la falta de ajuste es apreciable; sin embargo, dicho modelo pudo ser usado para analizar la influencia de las variables. Se realizó un ajuste cúbico para el d32. Este modelo presentó términos confundidos que impidieron determinar una relación final entre las variables puras y cruzadas, sin embargo, logró explorar toda la superficie de respuesta, ya que expresó mejor la variabilidad experimental sin falta de ajuste. Los modelos cumplieron con las premisas de normalidad, independencia y homocedasticidad. Resumen en inglés In the Food Industry, highly-concentrated disperse phase emulsions (> 75%) are frequently produced, considering physicochemical and compositional parameters, and the mixing conditions. Most of the research related to the mixing of disperse systems has studied diluted systems without surfactants. The present work deals with the preparation of highly-concentrated corn oil in water emulsions with ethoxylated non ionic surfactant. The experimental method was based on factoria (mas) l design 2³ with central and axial points, where impeller rotational speed, time agitation and, oil: water ratio were varied. The influence of those variables on volume and surface area mean drop diameter of emulsions, d43 and d32, respectively, was evaluated. Through the analysis of variance of experimental space, eliminating the non-significant effects, it was determined that d43 can be predicted almost by 99% by a quadratic model, but this model, by itself, can not explain the d32 whole extension response surface, because the lack of fit is considerable; however the quadratic model can be used to analyze the influence of the variables. A cubic fit was developed for the d32, this model presented confused terms that do not permit the determination of a final relationship between pure and crossed variables, but allows the exploration of the complete d surface response, because it represents better the experimental variability without lack of fit. The model’s assumptions normality, independence, and homocedasticity were satisfied.

Resumen en español La integración de los trabajadores autónomos en los mecanismos de protección social, entendidos éstos como sistemas públicos de previsión social destinados a paliar las situaciones de necesidad protegidas, se produce en casi todos los países europeos con posterioridad a la protección de los trabajadores asalariados. Así, en España, su evolución histórica puede definirse como un lento caminar desde principios del siglo XX hasta la definitiva consolidación de s (mas) u Sistema de Seguridad Social, en virtud de la Ley de Seguridad Social del año 1966. Con anterioridad a la implantación de dicho sistema, el ordenamiento jurídico español se caracterizó por la regulación de diversos seguros sociales dispersos y, posteriormente, por la configuración de mutualidades laborales que coexistieron con aquéllos. En estas etapas previas, el trabajador autónomo pasó de ser prácticamente excluido de los seguros sociales, a poder quedar integrado en una mutualidad. Las causas que determinaron estos hechos, y el camino recorrido en esta época en cuanto a la cobertura social de los autónomos, constituye el contenido fundamental del presente estudio Resumen en inglés The integration of autonomous workers in the mechanism of social protection, these being understood as social security public systems aimed to alleviate situations needed of protection, occurs in almost all European countries after the protection of remunerated workers. Thus, in Spain, its historic development can be defined as a slow walk from the beginning of the XXth Century until the final consolidation of the Social Security System, in virtue of the Social Security L (mas) aw of 1966. Before said system was implemented, the Spanish judicial order was characterised by the regulation of different disperse social securities and, later, by the configuration of labour mutualities that co-existed with them. In these previous stages, the autonomous worker went from being almost excluded of social security, to being integrated in a mutuality. The causes that determined these events, and the road travelled in this period regarding social coverage for the autonomous workers, constitutes the main contents of the present study

Resumen en español Se desarrolló la caracterización de suspensiones de recubrimiento de núcleos placebos en sistemas acuosos que tenían como base polycoat 2 blanco, las que fueron coloreadas con 3 colorantes Lake diferentes. Se evaluó la densidad de estas suspensiones con diferentes porcentajes de sólidos dispersos (10-20 %), y se observó un aumento de estas con el incremento de sólidos dispersos. Se realizó el recubrimiento de núcleos placebos de diferentes tamaños de troquel y (mas) a las tabletas recubiertas se les efectuó un estudio de estabilidad del color a la luz, mediante la evaluación de su densidad óptica, estableciéndose el orden amarillo > azul > rojo. Se llevó a cabo un estudio de ganancia de humedad de las tabletas recubiertas a diferentes humedades relativas en hidrostatos estabilizados, y se confirmó la eficacia del sistema de recubrimiento para la protección de las tabletas en condiciones normales de humedad relativa. Los parámetros físico-químicos evaluados en núcleos placebos y tabletas recubiertas cumplen con los límites establecidos y se discuten algunos de ellos. Resumen en inglés The characterization of suspensions for coating placebo nuclei was developed in aqueous systems with white polycoat 2 as a base. The suspensions were colored with 3 different Lake coloring matters. The density of these suspensions was evaluated with diverse percentages of disperse solids (10-20 %). An increase of them was observed with the increment of disperse solids. The coating of placebo nuclei of different die sizes was carried out and the coated tablets were submitt (mas) ed to a study on the stability of color to light by evaluating their optical density. The following order was established: yellow > blue > red. A study on the humidity gain of the coated tablets was conducted at various relative humidities in stabilized hydrostats and the efficiency of the coating system for protecting tablets under normal conditions of relative humidity was confirmed. The physical and chemical parameters evaluated in placebo nuclei and coated tablets fulfilled the established limits and some of them were discussed.
