Objectives: The purpose of this work was to study the genetic determinants responsible for extended-spectrum beta-lactamase (ESBL) resistance of Salmonella isolated from Dutch poultry, poultry meat and hospitalized humans. Ionizing radiation has been used to treat poultry to remove harmful microorganisms, mainly Salmonella, which contaminates chicken, goose and other fresh and frozen poultry. This microorganism is sensitive to low dose radiation. Thus, irradiating these foods with doses between 1 to 7 kGy results in a large reduction of bacteria. Since it is necessary to determine whether irradiation has occurred and to what extend, this work studied the signal produced by ionizing radiation within the hard crystalline matrix of chicken`s bone to establish a control method. Chicken`s drumsticks were irradiated and bones separated from flesh were lyophilized and milled. ESR spectrum was then obtained. The ESR signal increased linearly with dose over the range 0.25 to 8.0 kGy. Free radicals evaluated during 30 days after irradiation showed stable in this period. (Author).
Analyses of food-borne pathogens are of great importance in order to minimize the health risk for customers. Thus, very sensitive and rapid detection methods are required. Current conventional culture techniques are very time consuming. Modern immunoassays and biochemical analysis also require pre-enrichment steps resulting in a turnaround time of at least 24 h. Biomagnetic separation (BMS) is a promising more rapid method. In this study we describe the isolation of high affine and specific peptides from a phage-peptide library, which combined with BMS allows the detection of Salmonella spp. with a similar sensitivity as that of immunomagnetic separation using antibodies.

Various control procedures have been suggested for reducing foodborne infectious diseases. Receiving considerable attention is irradiation. This report estimates the medical and wage (or productivity) benefits associated with prevention of five human diseases transmitted by beef, pork, and chicken. (These diseases can also be transmitted by other vectors, such as eggs, milk, and pets. But these sources are not included in the analysis.) All of these foodborne infectious diseases - salmonellosis, campylobacteriosis, trichinosis, tapeworm, and toxoplasmosis - could be significantly reduced by irradiating meat and poultry. Dye-sensitized nanocrystalline TiO{sub 2} solar cells are currently under development. Since these cells contain an electrolyte solution we reviewed the health and safety aspects in view of indoor applications, where personal contact cannot be excluded. Only small amounts of chemicals are present in each cell and so there is no danger of acute toxicity. However, long-term effects often can be caused by incidental contact with minute amounts. For this reason we have tested cis-di(thiocyanato)-bis(4,4'-dicarboxy-2,2'-bipyridine)Ru(II), the sensitizer dye in the Ames test. The dye was not mutagenic in the Salmonellatyphimurium reverse mutation assay and in the Escherichia coli reverse mutation assay.
Summary The antioxidant properties and toxicity profile of roasted noni (Morinda citrifolia L.) leaf infusion were evaluated. The 2,2-diphenylpicrylhydrazyl (DPPH) radical scavenging activity was greater than green tea infusion (81.6 +- 0.9% vs. 57.5 +- 1.8%, P < 0.001). The mean quercetin and kaempferol contents of roasted noni leaf infusion, as prepared by the consumer, were 0.24 +- 0.01 and 0.14 +- 0.01 mg mL-1, respectively. Excessive use of poultry litter (PL) on agricultural land is known to cause eutrophication of surface waters. Consequently, both poultry producers and PL users have to meet strict state and federal guidelines on litter storage and land application. The feather has been widely used as a indicator tissue of metal exposure in birds. The feathers were collected from Tuskegee University poultry farm (TUPF) and Harrison Poultry farm (HPF) chicken and analyzed by Inductively Coupled Plasma Atomic Emission Spectroscopy for lead, cadmium, cobalt, chromium, and copper contaminations. The mean levels of lead, cadmium, cobalt, chromium, and copper in TUPF chicken were 3.67, 0.13, 12.23, 0.22, and 7.71 ppm, respectively, and in HPF chicken were 5.32, 0.096, 11.03, 0.15, and 8.06 ppm, respectively. The mean levels of these metals did not show any significant difference between TUPF and HPF chicken.

An 8-week feeding trial was conducted to evaluate the use of local poultry by-product meal (PBM) in replacement of imported fishmeal in the diets of cobia, Rachycentron canadum. Six isolipidic (12%) and isoproteic (45%) experimental diets were formulated using PBM to replace fishmeal at 20, 40, 60, 80 and 100% dietary protein. Space heating/cooling systems account for approximately 30% of the global energy consumption. Such systems contribute to global warming by emitting 0.39.1011 MWh of heat and 2.9.1010 tons of CO{sub 2}. There is a general understanding that the way to reduce global warming is a more efficient use of energy and increased use of renewable energy in all fields of the society. The poultry industry in the Mid East is an important business. There are e.g. 13000 chicken farms in Syria producing 172,000 ton of meat. This industry employs directly almost 150,000 people. The total investment in chicken farming is 130 BSP. Even though, the annual mean temperature in Syria is {approx}15-18 C the winter temperatures are close to freezing for two months. Microbiological comparison between irradiated and non-irradiated foodstuff has been studied for a long time as a way to detect whether a foodstuff has been irradiated or not. Generally, the proposed methods are based on the fact that ionization select species of bacteria which are recognized to be radioresistant. So reduction or elimination of known radiation sensitive microbes from the normal endogenous microflora could give an indication that the foodstuff has been irradiated, predominance of known radioresistant bacteria should be another indication. In the present work, we try to develop a test based on the radiosensitivity of the bacteria independently of their place. These first experiments show that the determination of radiosensitivity of strains isolated from a product or even of global radioresistance of mesophilic microflora could indicate if this product has been previously submitted to ionizing radiations. The colour, odour, flavour and texture of a breaded turkey escalope irradiated at doses of 2 and 4 kGy was assessed using a trained sensory panel. Irradiation did not affect raw appearance but during storage the irradiated breaded products became paler than the control samples. The off odour of the raw irradiated products was stronger than that of the unirradiated samples. Irradiation also affected the odour, flavour and texture of the cooked products. Although the trained panelists were able to detect significant differences between irradiated and unirradiated breaded turkey escalopes, the numerical differences between treatments were often quite small. It is possible that an untrained consumer group would be unable to detect these differences. Further research is needed with consumer groups to establish if irradiated breaded products are acceptable. (author). 10 refs, 3 tabs.
Purpose - The objective of this study is to examine the effects of pan-frying, boiling and cooking in a microwave on the amount of L-carnitine in meat and to look at its distribution in the surrounding fluid after food processing. Design/methodology/approach - Total carnitine, free carnitine and acylcarnitines were determined in meat samples from beef, pork and poultry (including ostrich) and in a liver sample from beef. The measurements were carried out before and after the specimens were subjected to different heat treatments. A radio-enzymatic assay was used for measurement of L-carnitine. Environmental data were collected for most environmental media including air, Columbia River water, external radiation, foodstuffs (milk, beef, eggs, poultry, and produce) and wildlife (deer, fish, and game birds), as well as soil and vegetation samples. In general, offsite levels of radionuclides attributable to Hanford operations during 1979 were indistinguishable from background levels. The data are summarized in the following highlights. Air quality measurements of NO/sub 2/ in the vicinity of the Hanford Site and releases of SO/sub 2/ onsite were well within the applicable federal and state standards. Particulate air concentrations exceed the standards primarily because of agricultural activities in the area. Discharges of waste water from Hanford facilities in the Columbia River under the National Pollution Discharge Elimination System (NPDES) permit were all within the parameter limits on the permit.
Increasing quantities of chicken waste concerns the poultry industry because of escalating disposal costs and the potential for environmental pollution. Biological conversion of these wastes to valuable products such as methane and/or chemical feed-stocks appears to be feasible. Biomethanation of chicken waste by a sewage sludge microbial consortium produced as much as 69 mol% methane in the gas phase. Acetic and propionic acids were the major acids produced during the bioconversion. Addition of chelating agents and other micro-nutrients enhanced methane production and shifted the ratios of intermediates accumulated. Preliminary data indicate that more than 60% of the chicken waste carbon was converted and that the nitrogen-rich residue may have potential as a soil additive. (author).
Individuals with sickle cell disease (SCD) demonstrate an increased susceptibility to invasive bacterial infections (IBI). The most common organisms causing IBI are Streptococcus pneumoniae, nontyphi Salmonella species and Haemophilus influenzae type b (Hib). IBI are the most common causes of death in children below 5 years of age with SCD. Increased susceptibility to IBI is because of several factors including dysfunctional antibody production and opsonophagocytosis as well as defective splenic clearance. Early diagnosis of Hib and pneumococcal infections combined with antibiotic prophylaxis and immunization programs, could lead to significant improvements in mortality, especially in Africa. 'The unwarranted rejection of this process, often based on lack of understanding of what food irradiation entails, may hamper its use in those countries which may benefit most', Dr. Jean-Paul Jardel, WHO's assistant director-general, argued following a recent international conference on the subject. A liquid chromatography-negative ion electrospray tandem mass spectrometric method is presented for the confirmatory analysis of all six resorcylic acid lactones ('zeranols') in urine samples using deuterium-labelled internal standards. This study was undertaken to determine if a combined treatment (marinating in natural plant extracts or vacuum) with irradiation could have a synergistic effect, in order to prevent the lipid oxidation resulting in the development of undesirable flavours. The fresh chicken legs were irradiated at 0,3 and 5 kGy. The fatty acids composition of lipids was identified using gas liquid chromatography. The effect of irradiation treatment combined with a pre-treatment on the fatty acids composition was followed. The day after irradiation, ten panallists were asked to evaluate, using the instruction scaling, the overall appearance, the odor, the flavor and the overall acceptability of the samples. The major fatty acids identified in lipids were oleic acid, palmitic acid, palmitoleic acid and stearic acid. Pre-treatments have a significant effect on linoleic acid (C18:2) and higher fatty acids. Two plasmids which express either nearly intact or truncated filamentous hemagglutinin (FHA) from Bordetella pertussis and which are marked with a tetracycline resistance (Tcr) gene were transformed into Salmonella dublin SL1438, an aroA deletion mutant intended for use as an attenuated oral vaccine against salmonellosis. These S. dublin recombinants, when fed to mice, induced serum immunoglobulin, immunoglobulin M (IgM), and sometimes IgA antibody responses to FHA and S. dublin. In addition, IgA antibodies against FHA were found in gut wash fluids. In the bacterial reversion assay with S. typhimurium TA98, TA100, TA1535 and TA1537, gamma irradiated hyaluronic acid (10 and 50 kGy) did not induce a significant increase in the number of revertant colonies in the presence of S9 metabolic activation system. In chromosomal aberration tests with CHO cells, gamma irradiated hyaluronic acid (10 and 50 kGy) did not result in an increase in the frequency of chromosomal aberrations. In vivo mouse micronucleus assay, gamma irradiated hyaluronic acid (10 and 50 kGy) did not show an increase in the frequency of polychromatic erythrocytes with micronuclei. Agricultural areas are contaminated thereby and the food quality is impaired. Three sites were selected in the vicinity of Dhaka city (Tongi pharmaceutical, Tejgaon industrial and Hazaribagh tannery area). A study was carried out to determine optimum decontamination dose for a locally manufactured coconut cream powder. Samples were gamma irradiated (0-15 kGy) and ageing process was achieved using GEER oven at 60 deg. C for 7 days, which is equivalent to one-year storage at room temperature. Iodine value (IV), ranging from 4.8 to 6.4, was not affected by radiation doses and storage, however peroxide value and thiobarbituric acid (TBA) generally increased with radiation doses. In most samples, peroxide value (meq/kg) reduced after storage, whilst the TBA (mg malonaldehyde/kg), indicator for product quality, slightly increased. The sensory evaluation conducted using 25 taste panellists indicated that scores on odour, creamy taste and overall acceptance for all irradiated samples at more than 5 kGy were significantly lower (P<0.05) than the control. A control group of geese (Anser anser) on a normal calcium diet for egg laying poultry was compared to egg laying geese on a calcium deficient diet. The ultimate compressive strength and modulus of elasticity of femoral cortical bone from each group were determined by compressing right circular cylinders which were 2.4 mm in height and 0.8 mm in diameter. The bending strength and bending modulus of elasticity of tibial cortical bone were determined by three point bend tests on rectangular prisms which were approximately 25 mm by 0.8 mm by 0.8 mm.
